Any true kiwi knows about Lolly cake. As I am back in Aotearoa I thought it compulsory to make some. The niece needed some treats to take for a work shout so I thought I would whip her up a batch as it is so easy and everyone likes lolly cake right?
I have tried to make this is in London but its just not the same without proper malt biscuits and eskimo lollies. However, it can be done by substituting the malt biscuits with rich tea biscuits and a some cocoa powder. For the eskimos in the UK, I use something called foam fruits or even a mixture of sweets like the foam bananas and dolly mixture which equally works well.
For those in New Zealand I used:
* 1 packet of eskimo sweets (about 150grams)
* Half a tin of condensed milk
* 120grams of butter
* 1 packet of malt biscuits
* 1 and a half cups of coconut
Cut the eskimos into pieces (about 5 pieces per eskimo).
Crush or whiz the biscuits in a blender until fine.
Melt the butter and condensed milk together.
Mix all the ingredients together and roll into a log shape and roll in coconut.
Chill in the fridge for a few hours then slice and enjoy.
So simple!
